How to Store and Use Christmas Leftovers

Oh hey there!

What's your favourite Christmas food? Food is inextricably linked with celebrations and many of us have food traditions associated with Christmas.

As I was growing up, my Mum had the same menu each year for Christmas. It was special because it was the only time of year we got to eat all of these delicious foods together! Our feast included roast pork with crispy crackling and apple sauce, roast chicken, pickled pork, coleslaw, potato salad, lettuce salad and tomato salad. Followed by cheesecake, trifle, fruit salad and ice cream for dessert. YUMMO!!

Even today we still share many of these foods at Christmas and it really brings that sense of tradition and nostalgia.

The thing with the big Christmas feast is it often leads to a lot of leftovers (unless you've got an absolute horde of people coming over!!). What to do with them?!? There's only so many slices of cold meat you can eat right? Here are a few ideas...

  • slice and freeze leftover roast meat for use in packed lunches at a later date
  • make roast meat fritters - these are sliced roast meats, covered with a simple batter, then fried on both sides
  • use leftover roast meat for pie fillings
  • make bubble and squeak with the leftover meat and roasted veggies
  • make an onion gravy and add slices of leftover roast meat to the gravy
  • mince or finely chop the leftover roast meat to make rissoles or burger patties

What's your favourite way to use up Christmas leftovers?? Hit reply and let me know!

Happy feasting,

Michelle
